Apple and Cinnamon Muffins

These Muffins are Sinful, Moist and Fluffy. They are so soft that they melt in the mouth like a cotton candy. These Muffins are the best I have made so far. I ❤ These.

Hello Lovely Readers,

It has been more than a week that September has started. I haven’t made any new post so far. I really feel sad about it. Not blogging for more than a week is more like a nightmare for any blogger. I am going thorough a Root Treatment for my tooth which has just kept me away from my favorite thing. I hate going to the Dentist. Do you feel the same?Well it is much more better now. I just have a few sittings left. I am hoping for the best.

August is over. And I am so excited about September. Will be meeting my Sister soon…Gawd I miss her soo much. August was an amazing month. I received soo much appreciation from all you readers. The Cheesy Quesadillas with Spicy Salsa and my Apple Pie were a huge hit. I am still getting alot of messages for these. My timetable for September is quite exotic. I have planned new things. I hope they are executed well…So Stay Tuned…There is alot more coming on the blog.

These muffins are really basic. There aren’t any fancy ingredients and the best part about these is that they are quite adjustable when it come to flavors. By that I mean is, If you do not like the flavors of Apple and Cinnamon you can very well change it. Or just keep it simple. Trust me these muffins are heaven on earth even when you eat them without any flavor. They are extremely moist and fluffy. Yes, I know most of you would be surprised with the fact that although they do not have EGGS , they are really moist. I felt scared picking them. One had to be gentle with these.

Muffins are my Mom’s Favorites. She simply ❤ Muffins. Her favorite flavors are banana, chocolate and vanilla. She is motivating me to try some coffee flavor too which I would soon be trying. Nonetheless, I made these ones for her. Her eyes lit with joy whenever I bake muffins and just like a little kid she cant wait for them to cool down. She gulps in one or two without even letting them cool. She is super cute.

I prefer my muffins sweet. By sweet I don’t mean they have to be extremely sweet or one cant have them, I just like them a little sweeter than normal. The choice is yours. The Apple Cinnamon Muffins are heaven on earth. The combination of Apple and Cinnamon just makes it the best thing in the world. I love the combination of Apple and Cinnamon…What About You?

They are fairy easy to put together and wont take long to bake. In order to make the muffins right it is really important that you choose the correct apples. Make sure that they are not too sour. We add a little extra sugar in the muffins in order to sweeten the apples too. Again it is entirely your choice if you want to add caramelized apples or just normal apples. You can make it simpler by just adding the plain apples so that they are not too time consuming. The apples will cook along with the batter.

RECIPE: APPLE AND CINNAMON MUFFINS

Makes about- 10 muffins

Preparation Time: 15 to 20 mins

Baking Time: 20 mins at 180 degrees

 INGREDIENTS:

  • All Purpose Flour- 100 gms
  • Whole Wheat Flour- 50 gms
  • Greek Yogurt- 3/4th cup
  • Baking Powder- 1 tsp
  • Baking Soda- 1/2 tsp
  • Castor Sugar- 1 cup
  • Cooking Oil- 45 ml
  • Vanilla Extract- 1 tsp
  • Apples- 2 Diced
  • Cinnamon Powder- 1 tsp
  • Salt- A pinch

PROCESS:

1. In a large bowl, add Greek Yogurt and whisk well until smooth with an electric meter.

2. Add Baking Powder and Baking Soda and leave aside  for 5 mins.

3. After 5 mins you will see that the yogurt would have started foaming up.

2. Now slowing add oil and whisk lightly.

4. Once its is white and foamy add sugar and whisk well.

5. Finally we will add flour mix to this mixture and combine everything together.

6. Now add vanilla extract and salt.

7. Lastly add apples and cinnamon and fold in lightly in the mixture.

8. Line a muffin tray with muffin liners and add the mixture into the tray.

9. Make sure you only fill 3/4th of the muffin tray.

10. Bake the muffins for 20 mins at 180 degrees.

11. Let them try on a cooling rack and you can digg on them once they are cooled.

Your Apple Cinnamon Muffins are now ready.
