Hello Lovely Readers,

Its weekend and I am just too lazy to make something fancy. I don’t understand: but the fact is I like cooking on weekdays. Just the thought of weekend makes me Lazy. ๐Ÿ˜› Also, I think my creativity works the best when I am alone and cooking. I like my space in the kitchen to cook. So yeah, I love cooking on weekdays. It just makes me really happy. I have thought of a few new recipes this week. I hope they come out well and I can share it on the blog.

P.S- Weekends are the best for lazy and easy cooking.

I am not a SALAD fan. I like it once in a while. Also I like eating my veggies just like that instead of putting it all together in the form of a salad. So yeah…Here I am with my first salad recipe on the blog. Actually this new addition is due to my sisters desire for me to make various salads. She is very fond of them and she really has encouraged me to try a lot of salads. So you will definitely be reading a lot of salad recipes coming on the blog.

This Cucumber Ribbon Salad with Yogurt Mint Salad is the easiest salad ever. The ingredients that are used are not very fancy. I believe you can find them at your kitchen on a day to day basis. It is really easy to put together and comes out amazing. Also, I have sliced the salad in the form of ribbons which look really gorgeous. The sprouts just enhance the taste and the health quotient of the salad. It adds that crunchy-ness to the Salad and goes really well with the dressing.

I had them for lunch and it was really nice. I have here used a Yogurt Mint Dressing. You can also go ahead and use a regular lemon dressing for the same. It would taste good with a Lemon Dressing too but turn out to be the best with this Yogurt Mint Dressing. This dressing is really Universal and you can use it for a lot of other salads or as a dip. Will be doing a post for the same too.

RECIPE: CUCUMBER RIBBON SALAD WITH YOGURT MINT DRESSING

MAKES- 2 BOWLS

PREP TIME- 5 MINS

INGREDIENTS:

For the Yogurt Mint Dressing:

  • Greek Yogurt- 1/2 cup
  • Olive Oil- 2 Tbsp
  • Lemon Juice- 1 ย 1/2 Tbsp
  • Salt- To taste
  • Pepper- To taste
  • Chat Masala- 1/2 Tsp
  • Green Chilli- 1 Finely Chopped
  • Mint Leaves- 5 to 6 Finely Chopped
  • Sugar- 1 pinch

For the Salad:

  • Cucumber- Ribbons( Cut with the help of a peeler)
  • Sprouts- 1/2 cup
  • Pomegranate- 2 Tbsp

PROCESS:

1. ย In a bowl mix all the ingredients under the heading of the Yogurt Mint Dressing and keep aside to chill in the refrigerator.

2. Add cucumber ribbons, sprouts and pomegranate in a bowl.

3. Add the dressing and top with a few mint leaves.

4. Serve Chilled.

Your Cucumber Ribbon Salad with Yogurt Mint Dressing is now Ready.
