Choco Swirl Almond Fudge Muffins

My Choco Swirl Almond Fudge Muffins are the best I have made so far. These are a burst of flavors in the mouth and melts like cotton.

My Banana Chocochip Loaf was a huge hit in the family. The cake was over the same day. Trust me. It was a 10 on 10 recipe and my family was craving more of it. But as we bloggers, keep trying something new, I didnt want to repeat it so early. Then I thought, why not…. But with a twist.

These Choco Swirl Almond Fudge Muffins are extremely moist. They melt in your mouth like cotton candy. And there are alot of flavors incorporated under one. There are almonds, walnuts, chocochips, chocolate pudding and what not. My muffins do sound a little complex but are super easy to make. If you loved my Banana Chocochip Loaf, you are going to love this one too.

Usually, when you use a lot of ingredients in one, there is a possibility of losing out on flavors as all the flavors are mixed. But, these muffins are different. You can easily distinct out each flavor individually. I made two batches of my almond fudge muffins. One was without the chocolate swirl and one was with the chocolate swirl and lots of chocolate chips. Both tasted divine.

P.S- These muffins are extremely addictive.

I doubled my recipe this time, because everyone keeps complaining about the fact that they get over so soon. But, even that didnt help. More han 70 % of my muffins got over the same day. These muffins are that addictive. LOL. So, please make them enough 😛

The muffins are really rich in flavor. As I mentioned you can make them without the chocolate swirl too. I like the addition of chocolate flavor to it. It just enhances the smoothness and taste. Like all my recipes, this one is EGGLESS too.  They are on my hit list. I was surprised as too how easy they were while making but at the same time they tasted effortlessly amazing. I have again used ripe bananas in these muffins to bring out the flavors and moistness of the muffins.  Therefore, if you have an over ripe banana at home do try these muffins.

P.S- Never throw away over ripe bananas, use them in your cakes and muffins to bring moistness and to enhance the flavors.

I have added lots of almonds to my muffins. I crushed the almonds and added them to both my batter and topped my muffins with almonds too. Well if you dont like almonds, you can try walnuts too. The choice is entirely yours. Make them the way you like.

Now lets begin with the recipe of the Chocolate Swirl Almond Fudge Muffins:

INGREDIENTS:

  • Ripe Banana- 1
  • All purpose flour- 1 1/2 cups
  • Almond Flour- 1/2 cup
  • Castor Sugar- 1/2 cup
  • Baking Powder- 1 tsp
  • Baking Soda- 1/2 tsp
  • Butter- 60 gms
  • Salt- A pinch
  • Yogurt- 3/4 cup
  • Vanilla Extract- 1/2 tsp
  • Finely Chopped Almonds- 1 cup ( 1/2 cup for garnishing)
  • Chocochips- 1/2 cup ( Optional)

For the Chocolate Pudding:

  • Fresh Cream- 1 cup
  • Dark Compound Chocolate- 40 gms
  • Sugar- 1 tsp
  • Corn Syrup- 1 tbsp
  • Vanilla Extract- 1/2 tsp

PROCESS:

Makes about 15 muffins

Prep Time: 10 mins

Baking Time: 20 mins

Preheat the oven for 10 mins at 180 Degrees

1. Sieve together All purpose Flour, Almond Flour, Baking Powder and Baking Soda and keep aside.

2. In a bowl, mash the bananas. Add sugar and butter and beat until its smooth in consistency.

3. Add vanilla extract.

4. Now, add the dry ingredients in batches, alternatively with yogurt. Make sure you do not over beat the mixture.

5. Once everything is combined, add the finely chopped almonds and chocochips.

6. Fold them in with the help of  a spatula.

7. Line your Muffin tray with muffin liners or simply grease them.

8. Pour the mixture. Make sure you only fill 3/4th of the muffin tray. Now add 1 tsp Chocolate Pudding on top of each muffin batter and just spread it with the help of a toothpick. Read the recipe to make Chocolate Pudding here.

9. Top with lots of chopped Almonds.

10. Bake for 20 mins at 180 degrees in a preheated oven.

11. After 20 mins, Check the muffins with the help of a skewer. If it does not come out clean, Bake for 5 mins more.

Your Choco Swirl Almond Fudge Muffins are now ready.

*You can also make plain almond fudge muffins as I have. All you have to do is skip the Chocolate Swirl and Chocolate chips

* Make sure you do not over beat the mixture.

* If you dont get ready made Almond Flour, you can substitute it with almond milk too. Or simply make them at home by crushing 100 gms of almonds in the mixer and sieving them.

* Use as ripe banana as possible for smoothness.

Baking a Bread has always been on top of my bucket list but I had never tried them. Honestly, I was always scared that they might not turn out the way they are supposed to be. Well, I am so so glad that I have finally baked them and to my surprise it turned out amazing. They are on my hit list and a Ten On Ten recipe. My family loved it too and trust me they are high on demand. 🙂

Banana Bread is the best creation ever. I wonder why I didnt try them earlier 😦 This Banana Chocochip Loaf is easy  very easy to bake. All you have to do is throw all the ingredients in the bowl, mix them and bake it. Simple isnt it. My super moist Banana Chocolate Loaf along with a scoop of ice- cream is the best dessert you could make. If you are a beginner at baking, and dont know where to start from- I would suggest you to try baking these Banana Chocochip Bread. They are moist, chocolaty and really really easy to make. They make you feel like a perfectionist.

P.S- I have used whole wheat flour for my Banana Chocochip Loaf .

This Banana Chocochip Loaf is low on calories. There are a lot of bananas, whole wheat flour and walnuts. They are low in calorie which is why you wont mind picking another piece of it. I am not really a calorie counter, but if you can bake something healthy yet so delicious then why not? I have used 1 1/2 cup whole wheat flour to 1/2 cup cake flour. But if you wish, you can bake them with cake flour itself. The choice is totally yours. It wont make a difference to the taste and the moistness of the cake.

A banana loaf cake is like a really vintage dish in the baking world. Its been made since ages. They are called Banana Bread but its more like a moist, sweet, fluffy piece of cake. I wonder why are they called BREADS . The best part about a banana bread is that you can eat it for Breakfast, with your Evening Tea or as a dessert. It serves all your cravings at its best.The shelf life of this cake is 3 to 4 days and trust me its as tasty as it is on the 1st day. All you have to do is microwave it for a few seconds and its ready 🙂

The trick to a really moist and flavored banana bread is to use a very ripe banana. Yes, you heard it right. Those bananas which have black dots on them are the ones you are supposed to use. When i asked my mom, to get me the ripest bananas she could find, She just laughed at me thinking I was talking nonsense.. LOL. She got me pretty looking ones and I had to wait for 2 days for it to ripe…arghh…. So, next time you have bananas rotting in the house, don’t throw them away, BAKE. 🙂 The best part about this bread is that you can Bake them any time you like. Banana is a fruit which is available almost all the time. With the most basic ingredients available in the kitchen, you can bake them.

P.S- Use the Ripest Banana Possible.

Lets begin with the Recipe for my Banana Chocochip Loaf.

INGREDIENTS:

    • Over Ripe Bananas- 4 ( Medium Sized)
    • Unsalted Butter- 50 gms
    • Whole Wheat Flour- 1 1/2 cup
    • All Purpose Flour- 1/2 cup
    • Baking Powder- 2  tsp
    • Corn Starch- 1 Tbsp
    • Castor Sugar- 3/4 cup
    • Salt- 1/2 tsp
    • Milk- 1/2 cup
    • Semi Sweet Chocochips- 1 cup
    • Walnuts- 1/2 cup (Optional)

PROCESS:

Makes 1 Loaf ( 9 to 5″)

Preparation Time- 15 mins

Baking Time- 50 mins

Pre Heat oven for 15 mins at 180 degrees.

1. Mash the bananas with your electric whisker or with the help of a spoon. This process should take about 5 to 7 mins. Make sure there are no lumps and its smooth.

2. In a bowl, sieve together, wheat flour, Cake flour, sugar, salt, corn starch and baking powder and keep aside.

3. Once the bananas are mashed, Add butter and Vanilla extract and beat it for 1 min.

4. Now add the dry ingredients alternatively with milk until everything is combined.

5. The batter will be thick and do not over beat.

6. Once everything is combined add chocochip and fold in with the help of a spatula.

7. Line your 9 to 5″ baking tray with a parchment paper and pour the batter in it.

8. If you wish, you can add some chocochips and walnuts on the top.

9. Bake for 50 mins in a preheated oven at 180 degrees. Check after 40 mins with the help of a skewer. If the skewer does not come out clean, bake for 5 more mins.

10. After 25 mins, cover the tray loosely with aluminum foil to avoid heavy browning.

* Use as ripe banana as possible for a super moist Banana Bread.

* Do not overfill the baking tray as the bread will have no space to rise.

* You can bake a simple Banana Bread too and avoid Chocochips.

*You can substitute milk with yogurt in this recipe.

*Dont Over beat the batter.

Strawberryy Vanilla Chocochip Muffins

Strawberrry is my favouritee.….

When they are in season I try to incorporate them in everything i make….. If you have read “KNOW ME” Page of mine you would know how much I love strawberries 😀

These muffins are sooo prettty lookingg….. The combination of strawberries and chocochips goes really really well and they look extremely tempting…… Before you begin lemmme warn you….They are going to finish within minutes…so make them enough……LOL..

For me…. It was more like an experiment…so i didn’t make much… I just made a batch and within minutes they were in demand…Ooopsy :(…. So Yeah… Make lots and lots of them, Coz one just cant be enough.. My mom has been wanting to eat muffins since long….She prefers vanilla or fruit flavors over chocolate….. while my brother likes it more chocolatyyy…. so i was there not knowing what to do….. So basically I incorporated the favorite flavors of each one of us………..and there it was my “STRAWBERRY VANILLA CHOCOCHIP MUFFINS”

They tasted heavenly and are sooo tempting….. The fragrance of vanilla while baking will just water your mouth and you just wanna eat them as soon as they are out of the oven…. but they taste amazing once chilled. As i always say, you can have your own version of it….so  you could omit strawberries and add your favorite fruit…like raspberry or blueberry or mixed…. the choice is yours…. If you dont want the flavor of the fruit then you could simply go ahead and bake a Vanilla Chocochip Muffin…. 🙂 :*

INGREDIENTS:

Makes about 10 muffins- medium sized

Prep time- 20 to 30 mins

Baking time- 20 mins

    • All purpose Flour- 1 1/2 cup
    • Unsalted butter- 120 gms
    • Baking powder- 1/2 tsp
    • Baking soda- 1/2 tsp
    • Vanilla extract- 1 tsp
    • Castor Sugar- 1/4 cup
    • Yogurt-1/4 cup
    • Fresh Strawberries – 1 cup diced
    • Chocochip- 3 to 4 Tbsp

PROCESS:

Preheat your oven at 180 degrees for about 10 to 15 mins.

  1. In a large bowl whisk butter and sugar together until light and fluffy.
  2. To this mixture add yogurt and vanilla extract and whisk until its light in color and smooth. You could use an electric whisker or whisk with your hand. Whisk until the batter is smooth.

  4. Sieve flour, baking powder and baking soda and mix.
  5. Add the dry ingredients slowly in portions to the batter and mix. You could use a spatula now if its getting to messy with the whisker.
  6. Once you have combined the dry and the wet ingredients together to a smoooth paste.. add fresh strawberries and chocochips.

  8. Just incorporate them well in the mixture. You don’t need to mix much.

  11. Now line your muffin tray with muffin cups. Don’t worry if you do not have muffin cups… you can simply grease your muffin tray and add the batter directly.
  12. Fill in the batter and do not overfill.

  14. Bake for about 15 mins first and check if the muffins are done. If they are not, you could bake them for additional 5 mins.
  15. Lets the muffins cool down, before you enjoy eating them.

You can also serve the muffins with Ice-cream, Whipped cream , Cream Custard or Fruit syrups and Fresh fruits.

I like mine with more and more strawberries 😀 I just cant get enough of them.

You can skip vanilla extract and add strawberry extract if you want dont want the vanilla flavor incorporated.

You can decorate them simply with Icing Sugar and they are ready to go.

Are you looking for an easy, fast, delicious and healthy breakfast option? Are your children or siblings not eating fruits…….. which you want them to? Do you find it difficult to make a healthy yet delicious breakfast when you are running short of time?

Well if Yes…………. The answer to these queries is the most easiest and healthiest breakfast option: “FRUIT PARFAIT”

Breakfast is the start of the day and you want it to be amazing…… Isnt it? Its reallly annoying when you wake up to a breakfast you don’t like…………………. Well, i get super annoyed. I have been trying to make really fun breakfasts these days….that are so gorgeous looking that it just makes your day 🙂

Hellooo…. Aren’t all of us bored with the routine- Milk, Cornflakes, Breads, Toasts, Butter, Pancakes etc??????There has to be something different!!! All of you will agree to this 😛 …. So to your rescue i will be posting a lot of easy yet healthy breakfast options that would make your day…. This is the first one i am posting in this categoryy…….

Whenever we look at something like the picture posted above, we are too scared to try them. It just shows so much effort must have gone in….But trust me it is super easy to make….. And the best part is , with everything available in hand you can make them any time of the day you want to!

Breakfast is the most important meal of the day and we want to add as much nutrients as possible to this. Fruit Parfaits are full of nutrients from all raw ingredients and the best part about them is that you can make it the way you like………….. Isnt that cool? The fruits can be of your choice… the Yogurt can be of your choice and you can even carry them in plastic cups for work or school…… … It fulfills the urge of a dessert tooo.. but yeahh… A healthy dessert i must say 😛

INGREDIENTS:

Serves- 4 to 5

Prep Time- 30 mins

Presenting Time- 10 mins

  • Biscuit Crumbs- 1 cup
  • Vanilla Yogurt- 3 cups
  • Castor Sugar- 2 Tbsp
  • Salt- A pinch
  • Chocolate Chips( white/dark)- 3 Tbsp
  • Sprinklers- 1 Tbsp (Optional)
  • Fresh Fruits Diced
  • Mixed Granola- 1 Cup

PROCESS:

  1. In a food processor, grind the biscuits and granola together. If you like it crunchy you may skip grinding the granola in the food processor.
  2. Line your service glass with a layer of this mixture.
  3. You may add chocolate chips to the mixture too…. Its completely your choice..( I like mine a lil chocolatyy 😉

  5. Once you have lined your serving glass with it… Allow it to cool in the refrigerator for about 15 mins.
  6. Now you gotta start layering the yogurt and the fruits one by one.Add a pinch of salt and sugar to your yogurt to enhance the taste. This is entirely optional. Create as many layers as you like.

7. Add sugar to citrus fruits so that they dont taste too sour.

8. Layer with the fruits you like and use your creativity to make it look beautiful.

9. Top with chocolate chips and sprinklers to give it an additional taste .

Your healthy and easy breakfast is now ready. :* 🙂

*The biscuits can totally be of your choice. You could use digestive biscuits, bourbon biscuits, oat cookies, chocolate cookies or any other flavor and texture of cookies you like.

* Using chocolate chips and sprinklers is optional…. Its entirely your choice. They just add a little more flavor to your parfait.

* You can use any yogurt of your choice. Vanilla yogurt is not compulsary.
