Summery & Peppy Veg Bruschetta

Ah, the bounty of summer. Italian Bruschetta is a wonderful way to capture the flavors of ripe summer tomatoes, fresh garden basil, and garlic. What could be more summery than grilled peppers and tomatoes on a toasted country bread with flavors of your choice! 


This versatile recipe works both as an appetizer or even a whole meal. Either ways it a complete WIN- WIN 😀 I would rate this one 10 on 10 and is one of my favorites. It gets ready in no time and is perfect when you are inviting people home for dinner. Saves time and is extremely gorgeous looking.Well I had no guests coming over. 😛  But it was a result of my urge to eat something really nice..peppy…crunchy and spicy…Yummm….. So here it was…Veg Bruschetta. If you are looking for an easy, snacky and summery first course then this is a perfect one.

My love for Bruschetta’s started when I was in college. They acted as the perfect take away and I simply loved the flavors. I loved having them every now and then. ❤ They have been on my cooking list and I had to try them…So finally I did and am super happy with the way they turned out. 🙂 They are very summery and peppy… The use of fresh tomatoes and peppers just makes it amazing.



Bruschetta’s could be as simple as just using tomatoes and basil, but yeah you can always experiment with your favorite flavors and veggies. So go ahead and try create your own version of it. 🙂

The best part about a Bruschetta is that you can play with the ingredients. You could use veggies of your choice. Not only veggies the sauce could be of your choice too…. Use your favorite pesto or creamy mushroom or the all time favorite tomato and basil. 😉

This bruschetta recipe is extremely simple and only relies on a few flavors to make it amazing. Because of this, you really want to use the best ingredients you can find. During the summer, you’re probably inundated with sweet, plump tomatoes. In other months though, you might need to look a little harder.


Seasoning tomatoes 😀

Seasoning the Tomatoes is the secret ingredient for a perfect and tasty bruschetta. It really takes them to the next level. Before doing anything else, we chop the tomatoes and season with salt and pepper. Not only that, but we leave them alone for about 10 minutes. As the tomatoes sit, they become extra flavorful. They also release some of their juices — this is perfect for when we’re topping the bread later.


Serves- 6 to 7

Prep Time- 15 mins

Baking Time- 12 to 15 mins

  • Italian Bread (or any bread of your choice)
  • 4 Plum Tomatoes- Finely Chopped
  • Mixed Peppers- 1 Cup finely chopped
  • 2 Red Onions- Diced
  • Garlic- 2 cloves
  • Amercian Corn- 1 cup(Optional)
  • Shredded Mozzarella Cheese- 2 cups
  • Olive oil- 2 Tbsp
  • Balsamic Vinegar- 1 Tsp
  • Salt and  Black Pepper – to taste
  • Seasoning( Chilli flakes, Oregano, Thyme, Basil)


Preheat oven at 150 degrees for about 15 mins.

1. In a large bowl, add the tomatoes, garlic, vinegar, olive oil, salt and pepper.

2. Cover and leave it in the fridge for about 20 to 25 mins. This will allow the flavors to soak and blend together.

3. Now add onion, corn and the seasoning.

4. Line your bread in a baking tray. With the help of a spoon divide the mixture evenly on the bread.

5. Top it up with lots of mozzarella cheese.

6. Bake till the bread is nicely toasted and the cheese melts.

7 . Serve hot.


Your Veg Bruschetta is now ready.

* A Bruschetta can be as simple as only fresh plum tomatoes and basil.

* If you dont have dried basil you can use fresh ones too.

* Play with the toppings. Pick your favorite.

Cottage Cheese and Peas in Tangy Tomato Gravy (Matar Paneer)


These two basic ingredients can do wonders and enhance your taste buds.

This is my first Indian Cuisine recipe on Cooking Diary by Shruti. So far I have posted mostly baking stuff and desserts. Well the blog isnt about baking only. Cooking is more like a passion and I explore all the cuisines and recipes.  So i am excited about this one.

Well….. Matar Paneer is not made with too fancy ingredients. Paneer (Cottage Cheese) and Peas are like the basic ingredients in the kitchen. It goes really well with Rotis, Rice or any other kind of bread you would prefer.

Confession: I am not a Cottage Cheese Fan!!!  😛

Yess… its true…… Although i am a Vegetarian I am not too fond of Paneer. I enjoy cooking it and I love the gravy but no Paneer. My friends find it really surprising……… 😛 They say if you are a vegetarian you should love paneer but I just dont enjoy it.


This dish is reallly easy to make. And trust me the tangy and spicy tomato gravy will just make your taste buds dance. Many people like the gravy a bit creamy tooo…..But I like this one a little spicy and tangy…. It just goes perfect with the Peas.

The best thing about Indian Cuisine is that there are so many flavors you can incorporate in one dish and each one of you could just create your own version of it. There are no rules…. You could make it as spicy, sweet, tangy or creamy as you wish. So its so much fun cooking it.

My mom makes the best paneer in this world…….. and this recipe is very much inspired by the way she makes it.


Very easy and fun to make this delicious authentic recipe. 🙂


  • Cottage Cheese – 200 gms
  • Peas (Boiled) – 1 cup
  • 2 small onions diced
  • 4 medium sized tomatoes diced
  • 2 cloves Garlic
  • 1 Green Chilli
  • Fresh Corriander chopped
  • Cumin seeds- 1/2 tsp
  • Turmeric powder- 1/2 tsp
  • Red Chilli Powder- 1/2 tsp
  • Sugar- A pinch
  • Black Pepper Powder-  A pinch
  • Garam Masala- 1/2 tsp
  • Tomato Ketchup- 1 tsp
  • Salt to taste
  • Water- 1/2 cup
  • Vegetable/Cooking Oil- 2 Tbsp



1. In a heavy bottom pan, heat a tbsp oil, add cumin seeds, garlic, green chilli, and onion.

2. When the onion turns golden add in the diced tomatoes.



3. Now add salt and turmeric powder to these and cook them for about 5 to 7 mins.

4. Once the tomatoes are cooked….. let them cool… and blend them in a food processor together to form a fine paste.

5. Reheat pan….. Add 1 tbsp oil and add the cooked tomato paste. Let it cook for about 2 mins.

6. Now add red chilli powder, black pepper, sugar, tomato ketchup, garam masala powder, and cook.

7. Add a little water so that the it does not stick to the pan.

8. Let this cook for about 3…4 mins.


9. Finally add the boiled peas and cottage cheese.

10. Garnish with fresh coriander and serve hot.


Your cottage cheese with peas in tangy tomato gravy is now ready. Enjoy it with steamed rice or rotis or any bread of your choice.

* You can avoid adding red chilli powder if you dont like it too spicy.

*You can use butter instead of vegetable oil.

*If you are not too much calorie conscious, you can fry the cottage cheese and then use it.

*If you prefer the texture to be more creamy…… you can add cream after step 8.

Strawberrry Jim Jam Cookies


All Hail…….. Sweet…Fruityy…Chewyyyy… Jam Cookies are here !!!



My butteryy and tangyy Jim Jam cookies will melt your heart!!

These gorgeous looking Jam Filled Cookies are soo tasty…….. And the bestest part about them is that you have super fun making them. They are so so easy to make. I made about 2 batches of cookies and they were a favorite in the house. They look so pretty and the jam is the high light of these buttery cookies.

They are so buttery and chewyyy- which is the essence of these cookies……. As a kid most of us have loved Jam Filled Cookies…. They are like a treat to the eyes and the jam in it is so attractive looking.

The Choice of Jam can be totally yours… You could make right from Strawberry jam cookies to pineapple raspberry or blueberrry…. alll taste heavenlyyyy… 


Honestly, this was the first time I was baking a Jam Filled Cookie. Though the cookie is really easy to make it could be tricky at times. You might end up overfilling the Jam or the Jam would spill all over the cookies etc.

Welll….. even though all these thoughts were there in my mind I had to make them. And I BAKED them late night 😛

These cookies require a lot of patience. Since the dough is buttery you need to let it rest in the oven for at least 2 hours. I kept it for almost 3 hours. This makes the cookies soft and helps it rise!!

I was totally surprised by the way they turned out….so colorful and so tastyyyy….. AWESOME !!!!!

Do try baking them…. they are soo much fun making. 😀 And the baking time of these cookies is really less as you want your cookie to be chewy and soft.


Serves- 2 dozen cookies( medium sized)

Prep Time- 2 1/2 hours ( Including the pastry dough resting period)

Baking Time- 12 to 15 mins

  • All Purpose Flour- 250 gms
  • Unsalted Butter- 150 gms
  • Castor Sugar- 100 gms
  • Baking Powder- A pinch
  • Vanilla Extract- 1 tsp
  • Strawberry Jam- 1 cup chilled



Pre- Heat oven at 180 degrees for about 15 mins.

  1. In a large bowl, Rub in butter and flour with your hands until mix well and the butter has nicely coated the flour.
  2. Add sugar and vanilla extract and make a dough.
  3. Cover the dough with a plastic wrap and let it chill in the refrigerator for about 2 to 3 hours.
  4. Once chilled, take it out of the refrigerator, and divide the dough into as many cookies as you want to make.
  5. Make small balls and make your thumbprint onto it. 😛


6. Now with the help of a spoon, fill in your favorite flavor of jam into the cookies. ( This is the most fun part about these)







7. Grease a cookie baking tray an place the cookies into it. Make sure you leave enough space between each cookie as they will become more fluffy.

8. Set in the oven for about 12 mins to 15 mins.



9. Bake till the cookies are slightly brown. Do not over bake the cookies.

10. Let them cool for atleast 30 mins before you eat them 🙂





Your Strawberry Jim Jam Cookies are now ready 😀

* Strawberry Jam is not compulsary. You can make your favorite flavor Jim Jam Cookies.

* The dough chilling period is important. Do not skip that step.

* Allow the cookies to cool after baking because the Jam is hot for quite a long time.

* You can add more sugar if you like your cookies more sweet.

* You can add any other extract except vanilla if you want to give your cookies a different flavor.
