Pistachios, Nuts & Chocochip Loaf

This Loaf totally defines the start of the fall winter season and also that Christmas is about to come. Loaded with a lot of nut..chocolate chips and Pistachios, I don’t know anyone who wouldn’t fall in ❤ with this cake.

Moist, Fluffy, Nutty….My Pistachios,Nuts & Chocochip Loaf is the best Loaf Cake I made so far!!!!

You know sometimes, once in a while, I am completely taken aback by something new that I try and it turns out to be astonishingly SUPERB. This Loaf would be the apt example of this situation. I was so happy with the end results that it left me awestruck. I mean just look at this beauty.

I completely love the fall winters and they are my favorite part of the year. Right from wearing my favorite socks to those soft full sleeves, fall winters makes it up for everything. I kinda feel that baking is more fun during this season because we just tend to look for warm and rich flavors during this season. I personally like to gulp down something baked..right from cookies to muffins along my hot chocolate cup. Baking gives more pleasure and all those warm and gooey cakes and pies make the winter season all the more special.

P.S- Baking is much more fun during winters.

How many of you love the Christmas Fruit Cake? I like wait for the entire year to eat a slice of those beauties. I love the fact that it is loaded with plums and fruits and nuts and how amazing all of these tastes. Well, i know most of you must be thinking that why am I talking about Christmas a month in advance. That is because my Pistachios, Nuts & Chocochip Loaf is very much inspired by the Christmas Fruit Cake. Since I was craving it so much I had to try making something which would kill my craving for the Christmas Cake. Obviously, I couldn’t bake one of those, because it requires a lot of preparations so I tried to make a loaf which is loaded with nuts and chocolate chips.

During my early stages of baking, I never baked a cake loaf or a pound cake. Although, ever since my childhood I have been extremely fond of sliced dry cakes, I never had the confidence to bake one. I always thought that these loaf cakes cant be made without the use of eggs or without any expert advice. Till today I prefer dry slice cakes in comparison to anything. My first attempt to a loaf cake was my Banana Chocochip Loaf and it was a victory. That was really amazing. It is my mom’s favorite and she asks me to bake it once a week..phew 😉

It was my MOM’s 50th Birthday on the weekend and she didnt want any cake from the baker. All she demanded was for her favorite Banana Loaf. I was quite bored of baking that again and again. Its something with us food bloggers that we keep wanting to try something new all the time. So I promised my mom a loaf cake but I wasn’t sure as to what to make. Meanwhile, I was craving the nutty Christmas cake.. So I kinda mixed both the ideas and made a nutty pistachio loaf with a lot of chocolate chips. Voila!!!! It turned out to be amazing.

P.S- Its my MOM’s new favorite thing now 😛

This Loaf has a lot of nuts and pistachios because I like that nutty flavor in each bite. I have added crushed almonds, cashews and walnuts. You can add or remove any of these according to your taste and preference. Also, the chocolate chips is not compulsory at all. If you want to keep it entirely nutty you may do so. I have added a whole lot of chocolate chips because, I love the bitterness. The only thing that I would mention is that if you at all are thinking of adding the chocolate chips add the bitter dark chocolate chips. The semi-sweet or the sweet ones would not go well with this loaf as they would overpower the flavor of the nuts and also make the loaf extremely sweet.

Unlike my banana loaf I have used all purpose flour in this loaf. I haven’t replaced it with whole wheat. The flavor does change and I didn’t want to compromise on that. Again, its entirely upto you.

This loaf is extremely moist, soft and rich in flavor. Its tastes as good as a store bough slice of dry cake or even better may be. It is extremely easy to put together and is fuss free. If you are a beginner at baking, this loaf is totally for you. Ready in about an hour or so, this loaf will not disappoint you at all.

P.S- The loaf tastes best the next day once all the flavors are incorporated. Only if you have that much of patience eat it the next day. 🙂

RECIPE: PISTACHIOS, NUTS & CHOCOCHIP LOAF

Makes- 9″ Loaf (One)

Prep Time- 20 mins

Baking Time- 45 to 50 mins

INGREDIENTS:

  • All Purpose Flour- 1 1/2 cup
  • Baking Powder- 1/2 tsp
  • Castor Sugar- 1 cup
  • Unsalted Butter- 2 sticks
  • Buttermilk- 1 cup
  • Apple Sauce- 3/4th cup( Boil 2 large apples in water,sugar and lemon juice for about 20 mins and then grind them to a smooth paste)
  • Vanilla Extract- 1 tsp
  • Cashews- 1/4th cup chopped
  • Walnuts- 1/4th cup chopped
  • Almonds- 1/4th cup chopped
  • Pistachios- 1/2 cup thinly sliced
  • Chocolate Chips- 1/4th cup

PROCESS:

Sift together all purpose flour & baking powder and keep aside. In a separate bowl, whisk together apple sauce and butter for a few mins until they are combined. Now add sugar and beat the mixture well.

Now add the flour mixture alternating it with butter milk to for a smooth cake mixture. Make sure there are no lumps at all. Do not whisk much. Now keep the beater aside and fold in all the nuts and chocolate chips. Fold in these very lightly. Lastly, add vanilla extract and mix everything together….

Line a 9″ Loaf tin with butter paper. Also grease the sides. Add in the cake mix. Top with sliced pistachios and chocolate chips and bake for at least 40 mins at 180 degrees in a pre-heated oven.

Each oven is different. Therefore, bake for 35 mins first and poke a skewer to check if the cake is done or not. If it doesn’t come out clean you may bake it for another 10 mins.

Your Pistachios, Nuts & Chocochip Loaf is now ready.
